Today was our one year anniversary, so we wanted to do something chill but special for a Monday. If you know us, you know we are total homebodies! We would rather have a chill day lounging, working out, and cooking at home than go out to eat any day.
Our apartment pool used to be kind of sketch, but they recently resurfaced it and got fancy new furniture. Then they refilled it with garden hoses (there has to be a better way!!) Now it’s nice though, so we decided to have a picnic by the pool then go swimming!
I repurposed my cake carrier as a fancy picnic holder and arranged ham, swiss, and apple wraps; strawberries; and pina colada and key lime cupcakes for us to uncover and eat by the pool. The wraps are one of the weeknight cooking recipes in the June issue of Food Network Magazine, which I altered slightly and share here:
ham, swiss and apple wraps (makes 4 servings—two wraps per person)
ingredients:
1/2 red onion, thinly sliced
1/3 cup low-fat plain yogurt
Dried dill or parsley to taste
1 tablespoon honey
1 tablespoon mustard
Kosher salt and freshly ground pepper
1 1/2 tablespoons extra-virgin olive oil
4 ounces sliced honey ham, cut into bite-size pieces
3 ounces sliced Swiss cheese, cut into strips
Handful of boxed baby red and green romaine (or your preferred salad green)
1 apple, thinly sliced
8 whole wheat tortillas
3 cups strawberries, halved
instructions:
Whisk the yogurt, dill or parsley, honey, mustard, and salt and pepper to taste in a large bowl. Mix in the olive oil and whisk until combined. Add the onion, ham, cheese, lettuce and apple and toss to coat. Pile the ham mixture in the middle of each wrap. Fold in the sides, then roll up the wraps.
Serve with strawberries and Fluff’s summer cupcakes!
