Discovered: baby kale is way more delicious than mama kale! For a quick packable lunch: start with a Tupperware taller than it is wide. Pour a dash of vinegar and a dash of olive oil into the container, then add a little salt and pepper. Pack non-wilty elements first: baby tomatoes and baby carrots are good options. Next add baby kale and baby spinach, then some goodies like craisins or nuts on top. The salad will still be crisp when it’s ready to eat. Shake to toss and enjoy!
